Ingredients (makes 4 patties):
1 can of cannellini beans, drained
2 tbsp + 1/4 cup flour
1 jalapeño, seeded and finely diced*
2 scallions, sliced
3 tbsp Daiya or regular cheddar (optional)
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
2 tbsp oil for pan frying
*note: to seed and devein a jalapeño, cut in half longways and scrape out seeds with a spoon. Take a small paring knife and run it flat against the inside flesh to cut the white inner vein out. If you like it really spicy, skip this step.
Step 1. Mash the beans with a fork, or in a food processor until they resemble chunky mashed potatoes.
Step 2. In a bowl, mix the diced jalapeño, scallions, cheese, 2 tbsp flour, onion powder, garlic powder, salt and pepper with the beans.
Step 3. Place 1/4 cup of flour onto a plate.
Step 4. Form into 4 patties and coat each with a thin layer of flour.
Step 5. Fry in a pan over medium high heat for about 3 minutes on each side, or until crispy.
Step 6. Serve with bbq sauce!
