1 package of fresh cranberries (12 oz)
1 cup water
1/2 tsp fresh grated ginger
1 tsp of lemon zest (about one lemon)
1/3 cup sugar
1/3 cup raspberry or strawberry preserves
1/2 cup dried cherries or strawberries
1 pinch salt
1 pinch cracked black pepper
Step 1. Add all of the ingredients to a saucepan on medium high heat.
Step 2. Cover with a lid and bring to a boil for 3 minutes until the cranberries start to burst open.
Step 3. One the cranberries are softened, reduce the heat until it is just barely simmering. Allow the sauce to cook for about 7-10 minutes uncovered until it reaches desired thickness.
Step 4. Taste the sauce to make sure it is sweet enough once it has cooked down a bit. If you feel it needs extra sweetness, add a bit more sugar or some honey, and add a little water if it thickens up too much.
