Ingredients (for two):
2 tsp ginger, grated
4-5 blood oranges, juiced
1 tbsp sugar (or more, to taste)
Sparkling water or club soda
2 sprigs of thyme
2 shots of gin
Step 1. Juice the oranges and combine with the grated ginger and sugar. Stir until dissolved.
Step 2. Freeze the blood orange mixture in a resealable container. Scrape with your fork every hour or so until your granita is frozen and flaky.
Step 3. Combine 1 shot of gin in each glass with a sprig of thyme. Muddle with a wooden spoon and remove the thyme.
Step 4. Add a few ice cubes and 4 tbsp of the granita to the gin to each glass, and pour about 2/3 of a cup of sparkling water or club soda over each. Adjust the amount of granita for sweetness.
Step 5. Garnish with sliced blood orange and fresh thyme sprigs.
