These will slay any diet you might be on- unless your plan allows for dark chocolate, which I highly recommend. Do not leave yourself or children unattended around these pb cups.
Ingredients (makes 4-5 cups)
1/2 cup dark chocolate chips 2-3 tbsp natural smooth peanut butter Optional teaspoon of coconut oil to help solidify the insides (I prefer them gooey)
Step 1. Line a muffin tin with 5 muffin cups Step 2. Microwave the chocolate chips for 20 seconds at a time, stirring in between intervals. They should be fully melted. Step 3. If you are adding coconut oil to the peanut butter, melt the oil and stir it in with the peanut butter. Step 4. Spoon out about 2 teaspoons of chocolate into each muffin tin. Use the spoon or your fingers to even out the bottom chocolate layer, ensuring that you get about 1/3 - 1/2 of an inch up the side of the cup. Refrigerate for 5-10 minutes, until fairly solid. Step 5. Spoon about 2 teaspoons of peanut butter onto the hardened chocolate and spread it evenly. Step 6. If the remaining chocolate needs to be softened, microwave it for 10 seconds and stir it around. Then spoon a layer of chocolate on top of the peanut butter and either leave it solid or swirl it with a toothpick. Step 7. Refrigerate until hard, and then try not to eat all of them in one sitting! I store mine in the fridge.
