1 package of pizza dough
2 portobello mushrooms, diced
1 small shallot, diced
1 clove garlic, minced
2 tbsp finely chopped walnuts
3 tbsp ricotta
Extra ricotta for dolloping
1/2 tsp truffle oil (more if you'd like)
Chives for garnish (optional)
Salt and Pepper for seasoning
Step 1. Preheat the oven according to the pizza dough package
Step 2. Prep and saute the mushrooms, shallots and garlic and season with salt and pepper. Let cool for a few minutes, then add to a food processor.
Step 3. Mix in 3 tbsp ricotta, 1/2 tsp of truffle oil, and pulse in a food processor or blender until mostly smooth
Step 4. Roll out your dough on a floured counter top, then transfer to a a sheet pan with a very thin layer of oil
Step 5. Spread the mushroom mixture onto the dough, sprinkle the walnuts and dollop some ricotta on top
Step 6: Bake according to package instructions (usually about 19 minutes). Then top with chives, cut with a knife or pizza cutter, and serve!
