2 and 1/2 cups raw, gluten free oats
1/2 cup ground flax seeds (aka flax meal)
1/4 cup coconut sugar
1/3 cup maple syrup
4.5 tbsp coconut oil
1 cup unsweetened coconut flakes
2/3 cup coarsely chopped raw pecans
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp Celtic or Himalayan salt
1/2 cup raisins
Step 1. Preheat oven to 325 degrees F and line a baking sheet with parchment paper.
Step 2. Combine all the wet ingredients in a small bowl, and the dry in a large bowl.
Step 3: Combine wet and dry ingredients.
Step 4: Spread evenly on the baking sheet and place in the center rack of your oven.
Step 5. Bake for 10 minutes, then remove it from the oven to add the coconut and nuts in. Toss and continue baking for 25 more minutes. checking and tossing the granola frequently.
Step 6: Add raisins in when there are 5 minutes left.
