1 tbsp oil (coconut, grapeseed, olive, any kind really)
1 large or 2 medium sweet potatoes, diced
1 small shallot, minced
1/2 package of vegan chorizo (I get mine at Trader Joe's)
4-5 scallion greens, sliced
Salt and pepper to taste
Vegan sour cream or a fried egg to top it off
Step 1: Sautee the shallots over medium high heat for 1-2 minutes
Step 2: Add the diced sweet potatoes, sautee for another 7 minutes or so, until the sweet potatoes are tender. About halfway through this process, add the chorizo and cook until crispy, about 4 minutes.
Step 3: Add a handful of fresh scallions right at the end, reserving a few for garnish
Step 4: Plate it up with a dollop of vegan sour cream, garnish with remaining scallions and enjoy!
Anyway, this recipe is so versatile. Some other things you can do: swap the sweet potatoes for plain or purple potatoes, use red onions instead of shallots, swap out chorizo for curry tofu crumbles, etc. If you do and swaps or substitutions, I'd love to hear about it in the comments!
