1 package of extra firm tofu
2 cups broccoli florets
1 orange or yellow pepper, sliced
1/2 red onion, sliced
2 cups spinach
2 tsp coconut oil
large pinch turmeric
1 tsp curry powder (also maybe a little less, depends on your taste!)
salt and pepper, to taste
Step 1. Heat the coconut oil in a pan on medium high and saute the vegetables for about 4 minutes, making sure to season them with salt and pepper.
Step 2. Pat the tofu dry and crumble it with your hands
Step 3. Add tofu to the pan with sauteed veggies and sprinkle all of your seasonings on before stirring everything together. Let it cook for about 3-4 minutes or until tofu is thoroughly heated through.
Step 4. Serve with nutritional yeast on top (I also used a lot of hot sauce!)
