6 white mushrooms, sliced (about a cup and a half)
1 cup grape tomatoes, halved
1/6 onion, chopped (about 3 tbsp)
2 cups spinach
1 tsp coconut or olive oil
salt and pepper to taste
Step 1: Saute the onions and mushrooms on medium heat until onions are translucent and mushrooms are golden. Season with salt and pepper.
Step 2: Add the spinach. It will look like a lot, but it wilts down. Saute it for a few minutes until it's about 1/4 of the size. Season with salt and pepper again.
Step 3: Add the tomatoes at the last minute.
Step 4: Add the eggs right on top of the scramble, season with salt and pepper, and cover for about 3-4 minutes or until they're done.
Step 5: Slide onto a plate and CONSUME.
